The maize starch is a form of carbohydrate which is white in colour, tasteless and odorless processed food ingredient. Starch, in its basic terms, is a complex arbohydrate known as polysaccharide. Pure starch is insoluble in water as well as in the alcohol. Maize starch is a cereal starch having low protein & ash contents. It is transformed into a very smooth paste within an hour during cooking. It is not necessary to add any antifoaming agent because the pH of maize starch is always maintained in neutral range. In addition to this, starch is easily dispersed in water to make homogeneous solution.
