Methods of addition:
For o/w emulsions lecithin is generally more effective when added to the oil phase
For o/w emulsion, lecithin is added to the oil phase since the lecithin's which promote w/o emulsion are not water dispersible
In all cases the lecithin is thoroughly dispersed to achieve the best results
Heating to approximately 120 degree can enhance handling & mixing characteristics of the more viscos lecithins
