Odor is aromatic and the taste is highly pungent. Pepper contains volatile oil, the crystalline alkaloids: piperine, piperidine and piperettine, and a resin. The alcoholic extract taken from the pippali or Long pepper contains the piperine (about 6%), which is slightly higher than that in black pepper.
