    Rasam is a traditional South Indian soup, fluid in consistency, which is usually eaten with rice or drank separately at the end of a meal. In a traditional three-course South Indian meal, the rasam is served after the sambar and before the curd or spiced buttermilk. Rasam is usually prepared fresh and consumed everyday in most South Indian households, as it is a potent digestive aid known for its carminative properties.

    The word rasam is derived from the Sanskrit word 'rasa', meaning 'juice'. Rasam, in broad terms, is a kind of a juice since the base ingredient is either tamarind pulp or tomato juice to which a special blend of spices and dried herbs is added. This spice blend, known as rasam powder is generally prepared at home or purchased as a ready-to-add masala. Rasam powder can be stored for up to six months when kept in an airtight container, in a moisture free environment.

    An interesting fact about rasam!

    There are 27+ varieties of rasam depending on the region, season and ingredient used. They range from the commonly prepared tomato rasam, garlic rasam, and lemon rasam to the exotic nellikai (gooseberry) rasam, murungai poo (drumstick flower) rasam and vepam poo (neem flower) rasam. Modern variations include the hugely popular apple rasam, pineapple rasam and beetroot rasam. The basis of the famous Anglo Indian Mulligatawny soup, which is a corrupted version of the Tamil word Milagu Tanni (pepper water), is also another variation of the humble rasam. (Source: Wikipedia)
