Used as a flavoring agent for confectionery, desserts, pastries, and meat, Cinnamon is characterized by sweet aroma and taste. The spice constitutes a primary ingredient for curry recipes, stewed fruits, especially apples and with mixed spices for pudding spice, pastry spice and mulling spices. Also used as one of the Chinese five-spices, Cinnamon is used in dessert dishes in the western world.
Some other common usages of the spice are given below:
1. Used in cakes and other baked goods, milk and rice puddings, chocolate dishes and fruit desserts, particularly apples and pears
2. Finds application in many Middle Eastern and North African dishes, in flavoring lamb tagines or stuffed aubergines
