It has a dense canopy of pinnate leaves with small, oval leaflets.Tamarind fruits are harvested when they are fully ripe.Harvesters can use long poles with hooks or simply handpick the ripe pods from the tree. After the tamarind pods are collected, the outer shell needs to be removed to access the pulp.To create tamarind concentrate or paste, the pulp is often boiled with water and strained to remove any seeds and fibers.Tamarind pulp can be stored in airtight containers in a cool, dry place.
