White Pepper, Application : Cooking

White Pepper is popular in European countries as it has a more delicate flavour than Black Pepper. It is used for pickling spices and marinades and in light colored foods like sauces and soups. To make White Pepper, the berry is picked when fully ripe and the outer layer of shrunken skin is removed, leaving the dried, greyish-white kernel.
