Paprika is a spice that is often overlooked by many cooks. The only time we think of paprika is when we make potato salad or chicken, using the spice for color to make drab dishes look alive. However, paprika is an interesting spice that can be used for much more than as a coloring agent.
Paprika is a red powder that is made from grinding the dried pods of mild varieties of the pepper plant known as (Capsicum annuum L.) The pepper plants used to make this spice range from the sweet Bell pepper to the milder chili peppers.
Paprika powder ranges from bright red to brown. Its flavor ranges from sweet and mild to more pungent and hot, depending on the type of pepper used in processing. Sweet paprika is the standard. It is mild in flavor. The hot paprika gives your taste buds a jolt.

Annatto Colour is extracted from the seeds of the annatto bush called Bixa Orellana. These seeds give two pigments, bixin which is oil soluble and norbixin which is soluble in water. |
Curcumin is the principle pigment of turmeric, a spice that is obtained from the rhizomes of Curcuma longa. Obtained by extraction from the plant to produce an oleoresin which is then purified, curcumin provides a bright, strong yellow shade in solution.
It is an oil soluble pigment that is available in convenient water dispersible forms that are used in a wide range of foods. Curcumin is extremely heat stable and may generally be used in products throughout the acid pH range.
Curcumin gives out a very intense colour with bright yellow appearance even at low doses. It can be used in Dairy Products, Flour Confectionery, Sugar Confectionery, Frozen Products, Dry Mixed and Savoury Products.

Safflower is a member of the family Compositae or Asteraceae, cultivated mainly for its seeds, which yield edible oil. Traditionally, the crop was grown for its flowers, used for coloring and flavoring foods and making dyes.
It gives yellow to bright orange color to food products and cosmetics.

Red Beet Root Colour is obtained from Beet Juice extracted from the roots of the vegetable called Beta Vulgaris. The pigment present in the beetroot is known as betalains which is further classified in Red Betacyanin which gives the red colour.
Beet Root Red gives a bright red to bluish red colour depending on the application and pH.
Beet Root Colour is sensitive to heat and prolonged heating above 90o Celsius will result in degradation of colour.
