The quality of jaggery is judged by its colour; brown means it is higher in impurities and golden-yellow implies it is relatively pure. Due to this grading scale, coloured adulterants are sometimes added to jaggery to simulate the golden hue. All types of the sugar come in blocks or pastes of solidified concentrated sugar syrup heated to 200 °C (392 °F). Traditionally, the syrup is made by boiling raw sugarcane juice.shallow, round-bottomed vessels. Sodium Bicarbonate is used to give a bleached look after adding metanil yellow (non permitted food colour in India).This is the reason why Jaggery looks yellow in colour rather than being dark. As dark is the actual colour of caramelization of sugar when the sugarcane juice is boiled.
palm jaggery/panai vellam/Karupatti vellam Palm jaggery or palm sugar is made from the extracted sap of the palmyra palm tree. . The sap is collected in earthen pots and gently boiled to a thick caramel colour paste and then dried. Palmyra palm jaggery is known to have a low Glycemic Index of 35 and is a great alternative healthy sweetener. It has 50 times extra minerals compare with white sugar, palm jaggery is a nutritious sweetener. So, it is a good and real sweetener.
