The mustard is a well-known oil seed. It is a small annual plant which grows up to a height of one meter with some branches. It has round stem with long intermodes, simple, alternate and very soft yellowish green leaves. The fruit is a pod of about 2.5 cm's long containing seeds.
It also contains vitamin B6, folic acid, magnesium, calcium, iron, niacin, vitamin A, vitamin E and is an excellent source of phytochemicals thought to prevent cancer.

Turmeric is the boiled, dried, cleaned and polished rhizomes of Curcuma longa. The plant is a herbaceous perennial, 60-90 cm high, with a short stem and tufted leaf. There are 7 to 12 leaves, the leaf sheaths forms the pseudo stem.

Fenugreek comes from the Fabaceae plant family. It is native to southeastern Europe and Asia. Its available and utilized both as spice (the seed) and herb (the leaves). It is cultivated as semi-arid crop worldwide. It is a seasoned herb with a somewhat sweet, nutty flavor described as cross between maple and celery often. It is used frequently in curries and is one of the famous Indian leafy vegetables and it resembles clover leaves. Fenugreek has a light bitter taste and has a little spicy taste with it. You can use fenugreek to spice savory meats, like pork or chicken, and vegetables.
