Winter wheat (usually Triticum aestivum) are strains of wheat that are planted in the autumn to germinate and develop into young plants that remain in the vegetative phase during the winter and resume growth in early spring. Classification into spring or winter wheat is common and traditionally refers to the season during which the crop is grown. For winter wheat, the physiological stage of heading (when the ear first emerges) is delayed until the plant experiences vernalization, a period of 30 to 60 days of cold winter temperatures (0 to 5C; 3241F).
Winter wheat is usually planted from September to November (in the Northern Hemisphere) and harvested in the summer or early autumn of the next year. In some places (e.g. Chile) a winter-wheat crop fully 'completes' in a year's time before harvest. Winter wheat usually yields more than spring wheat.

soft wheat flour is typically packaged as cake flour or pastry flour, and is best used for cakes, cookies, and pastries that should be tender and crumbly. it can also be used in fresh pasta, and produces a tender noodle.
soft wheats have lower protein and less gluten strength. this makes srw ideally suited for cookies, crackers, pastries, flat breads and pretzels. srw wheat is even used in maker's mark and twizzlers.dec 2, 2014

Spelt was an important staple food in parts of Europe from the Bronze Age to medieval times. Now it survives as a relict crop in Central Europe and northern Spain, and has also found a new market as a health food. Spelt is sometimes considered a subspecies of the closely related species common wheat (Triticum aestivum), in which case its botanical name is considered to be Triticum aestivum subsp. spelta. Like common wheat it is a hexaploid wheat, which means it has six sets of chromosomes

Wheatmeal (or brown) flour is processed to remove some of the bran and germ, whilst leaving behind 80-90% of the grain. This gives it a lighter texture than wholemeal (wholewheat) flour, resulting in a less dense dough. . Soft wheatmeal flour may be used to make pastry, biscuits and scones.
