    Usage Tips
Ground flax seeds can be used for many different reasons. You can sprinkle some on cereal or as an ingredient in the baking of bread, as a replacement for shortening in muffins and cookies or as an egg replacement. For bread, add 150 grams of ground flax seeds for each kilogram of flour. For shortening replacement, substitute 3 parts ground flax seeds for every part of shortening or oil. For egg replacement, substitute 1 tablespoon of ground flax seeds plus 3 tablespoons of water for 1 whole egg. Mix and let stand in bowl for 1 to 2 minutes, and use as you would for 1 egg.
    Storage Tips
Refrigerate in an airtight container. Ground flax seed stored this way will keep for up to 90 days.
    Points of Interest
Ground flax seed provides more nutritional benefits than does whole seed. That’s because flax seeds are very hard, making them difficult to crack, even with careful chewing. Grinding flax seeds breaks them up, making them easier to digest when eaten. Then the body can profit from all that flax goodness. The grinding of flax seeds is an extremely difficult and time consuming process. Flax seeds have to be ground very slowly in order to avoid generating heat, which could result in oxidation. Oxidation can cause the ground Flax Seeds to become rancid.
