Suji Puri
What it is:
Hollow pani puri shells made mainly with semolina (sooji / rava), typically chosen when a lighter, crisper shell is preferred.
Taste:
Mildly savory, clean and toasty, with a sharper crunch and a more neutralgrain flavor than atta pani puri.
General ingredients:
Semolina (sooji / rava), water, salt, oil; some commercialformulations also use a little maida or atta to help dough handling and puffing.
Color & texture:
Light golden to pale golden; dry, crisp and snappy, usually witha smoother and thinner shell than atta pani puri.
Typical shelf life:
Usually about 45-90 days in well-sealed ambient packs ifprotected from moisture; once opened, best used fast to retain crispness.
Atta Pani Puri
What it is:
Hollow pani puri shells made primarily with whole wheat flour (atta), intended for filling with pani and stuffing rather than serving as regular table puri.
Taste:
Lightly savory, wheaty and mildly toasty, with a cleaner whole-
General ingredients:
Whole wheat flour (atta), salt, oil, water; some recipes adda small amount of semolina or rice flour for better puff and crunch.
Color & texture:
Golden brown to tan; crisp shell with a slightly denser bite anda less glassy snap than rava-based shells.
Typical shelf life:
Usually about 30-60 days in sealed, moisture-protectedambient packaging; once opened, crunch drops quickly in humid conditions.
