Besan Laddu
What it is:
A round sweet made from roasted gram flour cooked in ghee andbound with sugar.
Atta Laddu
What it is:
A whole-wheat flour laddu prepared by slow-roasting atta in ghee andshaping it into balls.

Light brown to medium brown; dense, rustic and slightlycrumbly.
Panjiri Laddu
What it is:
A laddu version of panjiri, using roasted flour, nuts and seeds boundtogether into portions.
Taste:
Nutty, mildly sweet and aromatic, often less syrupy than regular laddus.

Moti Choor Daana
What it is:
Tiny fried boondi pearls used as a semi-finished base for motichoorladdus and related sweets.
Taste:
Mildly sweet if pre-syruped, otherwise neutral-fried and meant for furtherprocessing.

Besan batter, ghee or oil for frying, sugar syrup if partiallyfinished, optional color/cardamom.
Color & texture:
Bright orange to golden yellow; tiny, soft pearls that bind easilywhen mixed.
