Sesame oil (also known as gingelly oil or til oil) is an edible vegetable oil derived from sesame seeds. Besides being used as a cooking oil in South India, it is often used as a flavor enhancer in Chinese, Japanese, Korean, and to a lesser extent Southeast Asian cuisine.
The oil is popular in pockets of Asia and is also one of the earliest known crop-based oil, but world-wide mass modern production continues to be limited even today due to the inefficient manual harvesting process required to extract the oil.
There are many variations in the colour of sesame oil: cold-pressed sesame oil is pale yellow, while Indian sesame oil (gingelly or til oil) is golden, and East Asian sesame oils are commonly a dark brown colour. This dark colour and flavour are derived from roasted/toasted sesame seeds. Cold pressed sesame oil has a different flavour than the toasted oil, since it is produced directly from raw, rather than toasted seeds.

Castor seed growers and crushers hoard the commodity before selling in expectation of better prices. Castor oil too can be kept in containers without spoilage for long period.

Mung bean (Hindi: ), also known as green bean, choroko (in Swahili), mung, mongo, moong, moog (whole) / moog dal (split) (in Bengali , Marathi), mash bean, munggo or monggo, green gram, golden gram, and green soy, is the seed of Vigna radiata which is native to Bangladesh, India, and Pakistan. The split bean is known as moong dal, Pesara [] (Telugu), which is green with the husk, and yellow when dehusked. The beans are small, ovoid in shape, and green in color. The English word mung derives from the Hindi moong.
The mung bean is one of many species recently moved from the genus Phaseolus to Vigna and is still often seen cited as Phaseolus aureus or Phaseolus radiatus. These variations of nomenclature have been used regarding the same plant species.
Mung beans are mainly cultivated in India, China, Thailand, Philippines, Vietnam, Indonesia, Burma, and Bangladesh, but also in hot and dry regions of southern Europe and the southern USA. In India and Bangladesh, they are grown during two seasons. One is the Rabi season (starting November), and the other is the Kharif season (starting June). Mung beans are tropical (or sub-tropical) crops, and require warm temperatures (optimally around 30-35C). Loamy soil is best for pusap cultivation.
Urad (Vigna mungo), also referred to as urad dal, udad dal, urd bean, urd, urid, black matpe bean, black gram, black lentil (not to be confused with the much smaller true black lentil (Lens culinaris)), maas (in Nepali), u en (Vietnamese, literally: black bean) or white lentil (Vigna mungo), is a bean grown in southern Asia. It is largely used to make dal from the whole or split, dehusked seeds. It, along with the mung bean, was placed in Phaseolus but has been transferred to Vigna. It was at one point considered to belong to the same species as the mung bean.
Black gram originated in India where it has been in cultivation from ancient times and is one of the most highly prized pulses of India. It has also been introduced to other tropical areas mainly by Indian immigrants.
It is an erect, sub-erect or trailing, densely hairy annual herb. The tap root produces a branched root system with smooth, rounded nodules. The pods are narrow, cylindrical and up to six cm long. The bean is boiled and eaten whole or, after splitting, made into dal; prepared like this it has an unusual mucilaginous texture. Ground into flour or paste, it is also extensively used in South Indian culinary preparation like dosa, idli, vada, and papadum. When used this way, the white lentils are usually used.
It is very nutritious and is recommended for diabetics, as are other pulses. It is very popular in the Punjabi cuisine of India and Pakistan where it is known as sabit maash an ingredient of dal makhani. In Tamil it is known as ulunthu(), in Telugu as minumulu (), in Kannada as Uddina Bele ( ), and in Oriya as Biri Dali.
The product sold as black lentil is usually the whole urad bean or urad dal. The product sold as white lentil is the same lentil with the black skin removed.
