Annatto is an orange-red condiment and food coloring derived from the seeds of the achiote tree (Bixa orellana). It is often used to impart a yellow or orange color to foods, but sometimes also for its flavor and aroma. Its scent is described as "slightly peppery with a hint of nutmeg" and flavor as "slightly nutty, sweet and peppery"
Psyllium seeds come from a species of plantain (Plantago psyllium) and are an excellent source of insoluble (as well as soluble) fiber. They are the basis of many safe commercial laxatives. You can buy powdered psyllium seed husks at health-food stores without the sweeteners, dyes, and flavors that are added to drugstore products. The only caution about this wonderful remedy for constipation is that it must be used with plenty of water; otherwise the fiber will form an obstructing mass that may add to your problems.
Hulled sesame seeds are considered as the most nutritious seeds because of its proteins and valuable minerals. The husk hull (skin) of these seeds are removed hence are called as hulled sesame seeds. Prior to hulling process, these sesame seeds are thoroughly cleaned. Hulled sesame seeds are relatively softer and delicious as compared to natural sesame seeds.
Black sesame seeds are small, flat seeds, dark in color, that are used in cooking or for their medicinal properties. The use of sesame seeds and sesame oil dates back thousands of years. An Assyrian tale speaks of gods who drank sesame wine before creating the earth. Black sesame seeds are high in many minerals including calcium and iron and are also used to promote regular bowel movements. They have a sweet and nutty flavor.
Sunflower seeds are more commonly eaten as a healthy snack than as part of a meal. They can also be used as garnishes or ingredients in various recipes. The seeds may be sold as in-shell seeds or dehulled kernels. The seeds can also be sprouted and eaten in salads. When in-shell seeds are processed, they are first dried. Afterwards, they may also be roasted or dusted with salt or flour for preservation of flavor. Dehulling is commonly performed by cracking the hull with one's teeth and spitting it out while keeping the kernel in the mouth and eating it.

Sesame seeds are full of calcium, magnesium, copper, vitamin B1, zinc and dietary fiber. They offer the most nutritional value when the entire seed is used (un-hulled).

Dehulling improves crushing efficiency, but the hardness of the seed coat and the extreme softness of the kernel make the operation costly and only economically viable if there is a market for hulls

Dried lotus seeds that are sold in packages or in bulk at many Asian markets must first be soaked in water overnight prior to use due to their hardness and toughness. They can then be added directly to soups and congee, or used in other dishes. Fresh lotus seeds are sold in the seed heads of the plant and eaten by breaking the individual seeds out of cone shaped head. The soft rubbery shell that surrounds each seed should be removed before consuming.
