Modified atmosphere (MA) refers to atmosphere control with CO2, humidity and aircurculation system. Modified Atmosphere usually involve atmospheres with reduced O2 and/or elevated CO2 levels. The technologies of MA widely used for the storage of Potatoes and Onions. They offer advantages such as control of sprouting and low level of suger, control of biological processes such as rancidity, insects, bacteria and decay, among others.
