    Jaggery ("Gud" in India) is a natural product of sugarcane. It is in more unrefined form than sugar. 

    It is a brown raw mass of sucrose which gets it color because of other elements found in concentration such as wood ash and bagasse. Jaggery is commonly made from two products, that are sugarcane and date palm tree.

     

    What is raw jaggery?

    Jaggery is an unrefined natural sweetener. Some people consider it a superfood, because it has more vitamins and minerals and a lower sucrose content than sugar. However, jaggery is still a type of sugar, and people should consume it in moderation. Jaggery is a common product in Asia and Africa.

     

    Jaggery is a traditional non-centrifugal cane sugar consumed in the Indian Subcontinent, 

    Southeast Asia, and Africa. It is a concentrated product of cane juice and often date or palm sap without separation of the molasses and crystals, and can vary from golden brown to dark brown in colour.

     

    Jaggery prepared conventionally in open earth pan furnaces has been used as a sweetener in many places of India from ancient times. Sugarcane juice and bagasse extracted after crushing sugarcane are used as the raw materials to prepare jaggery.

     

    The Colour of the jaggery is dark brown. The colour also plays a role in determining purity. 

    If the gur appears in yellowish, it may have undergone chemical treatment. It is always recommended to buy hard jaggery, it means that there are no additives added during the process of boiling the sugarcane juice.

     

    Is raw jaggery healthy?

    It acts as a detox, as it helps cleanse the liver by flushing out nasty toxins from the body. Jaggery is loaded with antioxidants and minerals like zinc and selenium, which help prevent free-radicals (responsible for early ageing). It helps boost resistance against infections, hence building stronger immunity.

     

    Which jaggery is healthy?

    The sweetness of dates and the nutritious advantages of dates are combined in Palm jaggery. This jaggery is recognised for its therapeutic capabilities as well as its other health advantages. Date Palm Jaggery is most commonly used in the West Bengal region to make sweets.
