Pine nuts are the edible seeds of Siberian cedar (family Pinaceae, genus Pinus). The two prominent pine species known for their large edible kernels include Pinus sibirica and Pinus koraiensis. Pine nut in Russia more often known as Siberian pine or Siberian cedar(Pinus sibirica). Chinese pine nuts feature tough dark-brown color coat or shell. Pine nuts have a long slender kernel in comparison to oriental pines, which are broad, large and have higher fat content. Inside, the kernel has cream white color, delicate buttery flavor and sweet taste. Chilgoza pine nuts (Pinus gerardiana), is another special variety of pine, grows in forests in Central Asia, in the mountains of Baluchistan, Afghanistan, India (Kashmir, Himachal Pradesh). Chilgoza pines have similar appearance as stone pines; featuring long slender, pointed kernels.

Flavor:Typical of pine nut kernels. Free from Rancid, Strong, Stale, Bitter, or foreign flavors.

Odor:Characteristic pine nut kernels odors, without foreign odors.

Moisture: Max. 3.5%

Color: Pale ivory, typical of pine nut kernels.

Purity:  Free of foreign material and signs.

Broken Kernels: Max 4% weight basis

Damaged Kernels:Max. 1%: Yellow peak, Insect Damage, Polluted, Diseased and Immature Kernels 

are not exceeding 0.5 % among the 1%.

Oily kernel:Max. 0.5%

Shriveled kernel: Max. 1.5%
