Red Rice

The rice has a predominant red color due to the presence of anthocyanin, which is usually consumed unhulled or partially hulled. There are many varieties of red rice available out of which “Matta rice” or “Palakkadan matta”(this rice is indigenous to palakkad,kerala) is the most sought variety.
Red rice has lots of fiber, due to the bran, and also the flavor is significantly more powerful compared to hulled rice, tasting more nutty and full.
