Pine nut oil is composed of 90% unsaturated fatty acids, 50% of which are PUFAs, 40% MUFAs, and 10% SFAs (Ryan et al., 2006). Linoleic acid (all-cis-9-, 12-18:2) is the most abundant fatty acid in pine nut oil (PNO), and oleic acid (cis-9-18:1) is the second most abundant fatty acid in PNO.
